The anthocyan pigments content such biologically active components as vitamins, glycosides, organic acids, aromatic substances, microelements, etc. The anthocyan pigment harvested from cranberry fruits by dehydrofreezing was studied. The features and changing during storage of cranberry fruits are shown.
