Biochemical assessment of raspberry fruit is the first stage of breeding for the improvement of chemical fruit composition

The article sums up the data on the literature survey on the content of chemical substances in fruit of raspberries cultivated in different regions of Russia and abroad. Great attention is paid to the level of accumulation of biochemical components: soluble solids, sugars, organic acids, vitamin C (ascorbic acid) and vitamin P (phenolics). Among the studied regions, the high accumulation of anthocyanins in berries was noted in the Krasnodar territory - 150.5 mg/100 g. In the Tambov region and Lithuania anthocyanins accumulation was lower - 96.6 and 67.3 mg/100 g. Maximal contents of ascorbic acid in raspberries were in the Orel region - up to 42.0 mg/100 g. Orenburg region - up to 38.1 mg/100 g and Spain - up to 31.2 mg/100 g. It was found that in the south of Russia the accumulation of sugars was significantly higher while the content of organic acids was lower than in the Central Black Soil Region. It is shown that in conditions of the Orenburg region the content of sugars was accumulated more in the year with less precipitation during the growing season and a greater amount of active temperatures. The comparative analysis of the research reports on the biochemical composition in the berries of the collection plantings of raspberries in different regions of cultivation shows that the Orel region is favorable for raspberry cultivation. Raspberry cultivars with higher content of ascorbic acid in berries have been identified: "Babye Leto", "Gusar", "Zhuravlik", "Kokinskaya Ranya", "Lazarevskaya", "Meteor", "Novost Kuzmina", "Ranny Surpriz", "Skromnitsa" and "Sputnitsa".
