An important issue for pursuing a systematic and balanced policy of ensuring sustainability in the food market is the formation of predicted prices. It is impossible to make adequate decisions in this area without understanding exactly what factors determine the price level in the food market of the region. In the research process, data from the Federal State Statistics Service, including regional structures, are used, and correlation and regression analysis is used as the main method. A model is constructed in the article that allows explaining the influence of the main factors on pricing in the regional food market. It is indicated that the main influence is not the expenses of agricultural producers, but the general equilibrium, which has formed on the food market of the whole country. It is the change in prices on the country’s market as a whole that can explain the fluctuation in food prices in a particular region. Attempts to change the price level by administrative methods in a particular region will not be effective, which is important to consider when implementing further decisions to manage the formation and development of regional agricultural markets.
