The introduction of the food embargo was the first important event in the framework of the formation of a food security system, as a result of which the country’s domestic production potential began to grow dynamically. Despite the fact that already in the first years after the start of the political confrontation, it was possible to stabilize the food market, one of the negative consequences of the current situation was the inflationary rise in food prices, including dairy products. In the course of the study, a comparative analysis of the growth rates of real wages and consumer prices for the main types of dairy products in the context of the regions of the Black-earth region in the period 2018-2021 is carried out, the existing trends and their causes are identified. It was found that in the period 2020-2021. inflation rates in the food market in the regions of the Black-earth region exceeded the growth rate of real wages, which indicates a decrease in the affordability of food for the population. Ultimately, in 2021, prices in the consumer market in the regions under consideration increased by more than 9%, while real wages grew by no more than 5%. At the same time, the highest average prices for pasteurized milk were noted in the Tambov region, for cottage cheese - in the Voronezh region, and for butter - in the Kursk region. The increase in the growth rate of consumer prices has occurred in the last 2 years, and in 2018-2019 the situation was more stable.
