The article examines the development of organizational and legal mechanisms for regulating the quality and safety of food in post-Soviet Russia. The transformation of the normative regulation of this area in the direction of its compliance with international standards and the requirements of international organizations is traced. The drawbacks of the modern mechanism for ensuring the quality and safety of food products are noted. Based on the analysis of the current legal framework and policy documents of the Russian state, the main trends in the legal regulation of this area are highlighted.
