Intensification of the processing of dairy products by electrotechnological methods

In the field of intensifying the processes of manufacturing dairy products based on milk powder, research is being conducted based on the introduction of electrophysical processing methods into the hardware and technological schemes of production. Methods of processing and decontamination of dairy products using electric fields and ultrasonic effects by combining them at various stages of processing are considered promising. The demand for dry dairy products in the diet determines the relevance of research work on the modernization of existing technological methods with the development of energy-efficient dryers that use ultrasonic exposure when spraying raw materials. A promising direction that provides both an improvement in the quality of drying and a reduction in the energy consumption of the finished product is the introduction of ultrasound into the hardware and technological system for the production of dry whey. Ultrasonic spraying allows you to form a more uniform spray torch (compared to pneumatic spraying), which eliminates product entrainment due to the low content of fine fraction (particles less than 10 microns in size). The use of ultrasonic vibrations at the stage of interaction of drops with the drying agent intensifies the process of moisture evaporation (by increasing the diffusion coefficient), which makes it possible to reduce the drying temperature and intensify the disinfection process. A drying unit with ultrasound can be a worthy alternative to spray dryers currently used in agricultural enterprises and farms. The article presents the hardware and technological scheme of milk processing with the introduction of an ultrasonic dryer, which allows to reduce the energy intensity of the process by 2,5 times. It is established that the ultrasonic system provides product sterilization with high uniformity of drip spraying. The number of bacteria with pneumatic spraying is 91,0 million CFU/ml, with ultrasound - 3,9 million CFU/ml.
