The results of analytical research and practical application of the fundamental provisions of quality and safety management on the example of food products in the retail trade are presented. The share of low-quality and unsafe products sold in the sphere of food circulation in recent years has remained quite high and stable in almost all commodity groups, and the situation is characterized as unsatisfactory in the whole country and by regions. The lack of a well-thought-out policy management of quality and safety in trade, according to the authors, is the reason not only for the sale of low-quality products, but also for the formation of a high amount of food waste. It is established that the development of management of quality goods involves the use of three fundamental components: the study, collection and documentation of consumer properties and requirements for the quality and safety of goods, the development of a mechanism for the implementation of quality management and the choice of methods and tools for making managerial decisions. The identified factors and causes made it possible to establish the most important function of management of quality goods in trade - quality and safety control and to determine its content. The formed methodological base and its implementation are aimed at reducing the amount of low-quality products and reducing food waste.
