The paper discusses problems of functioning of enterprises in the baking industry at the present stage of development; the estimation of their financial and economic activities is given; the assessment methodology of ratings based on economic and mathematical methods is proposed; ranking of a number of enterprises in the Volga Federal District baking industry is implemented.
