Forecasting qualitative composition and properties of milk before milking dry

Dairy cattle breeding is one of the most important elements of the structure of the agro-industrial complex of Russia. Milk production level and the quality of milk are determined by the influence of numerous factors, among which are genetically deterministic level of productivity, physiological and animal health and the duration of economic use. Achieving high production levels that ensure the effectiveness of dairy farming is impossible without the use of new methods offered by the scientific community. One of the most promising ones is the study of the issues of obtaining diagnostic information and the development of informative methods for rapid assessment of indicators of functional homeostasis of animals and the quality of products obtained from them using a system of surface-localized biologically active skin centers. The laboratory studied the relationship between the level of biopotential of surface-localized biologically active centers of cows with qualitative characteristics and characteristics of milk before milking dry. The data we obtained showed the relationship between the qualitative composition, milk properties and bioelectric potential of biologically active cows. It was revealed that the intensity of metabolic processes and secretion in the mammary gland, caused by the content of microflora that provokes mastitis and predetermines the stability of casein micelles to the action of high temperatures, influences the sanitary and hygienic characteristics of fresh milk and its heat resistance, which can be estimated by level of the average biopotential of biologically active skin centers № 1, № 3, № 16, № 20, № 38, № 39, № 44, segmentally determined by the connections with the autonomic nervous system. Based on the results of the studies, a method was developed to predict the qualitative composition and properties of milk before extrusion.
