Comparative analysis of the foaming properties of model foam systems based on pectin-containing plant materials grown in the Oryol region

The presented study is a structural component of the ongoing startup project «Study of the foaming properties of pumpkin plant tissue as one of the common crops in the Oryol region», which was awarded the «Student Startup» competition in 2025. The material aims to identify potential applications of plant-based raw materials such as pumpkin, carrots, and apples for the creation of sustainable foaming systems. Laboratory tests have confirmed the effectiveness of the selected raw materials and have identified key factors influencing the formation and stability of the foam. The article describes the methodology and stages of recipe optimization aimed at achieving high performance characteristics of foam-forming systems.
