Veterinary and sanitary assessment of fish Carassius gibelio caught in the lake Achikul, Omsk region

Fish and fish products have been part of the human diet for a long time and are of great importance in their nutrition. For the population, the issue of quality and safety of purchased products is of priority importance: it is important that fish, even amateur fishing, is fresh and of good quality. Special attention in this work was paid to the study of fish caught from the Krutinsky Lake Achikul of the Omsk region, including its veterinary and sanitary assessment. We examined the acquired samples of freshly caught chilled fish according to organoleptic and physicochemical parameters, and also conducted a parasitological study. Organoleptic studies have established that all samples of the fish studied - eyes, gills, scales, smell, the condition of internal organs and the condition of muscles meet the requirements of the state standard. According to the results of physicochemical studies, we found that the pH of the fish was 6.7; the reaction to peroxidase was negative, the reaction to hydrogen sulfide - the solution was discolored. When conducting a parasitological study of fish samples caught from Lake Achikul in the Krutinsky district of the Omsk region, a deviation in parasitic purity was revealed: representatives of Postodiplostomum cuticola and Philometroides Sanguinea were found. Based on the above, we conclude that the fish is of good quality and comply with the state standard. The obtained results of organoleptic and physicochemical studies indicate that the fish caught from the Krutinsky Lake Achikul belongs to the category “freshˮ, but the parasites found are included in the “List of infectious and other animal diseasesˮ and, therefore, the fish cannot be allowed to be consumed.
