The purpose of the study is to study the effect of grain germination on the physical and biochemical parameters of grain and to identify the best varieties. Abundant moisture in the second half of August 2020 and 2023 affected the pre-harvest germination of grain in the ear and, accordingly, its physical properties. An analysis of 178 varieties of the collection nursery in 2023 showed that 51% were varieties with grain of varying degrees of germination. The grain was formed puny, on average 694.4-703.7 g/l and powdery 43.8-47.0%. The presence of sprouted grains reduced the physical and biochemical parameters for all biotypes. To assess the effect of grain germination on seed and commodity indicators, the varieties were divided into three groups according to the degree of decrease in these indicators: good, medium, low. The average germination rate for the groups was 83%, grain size was 692.2 g/l, vitreous content was 42.3%, the amount of protein and gluten was high - 16.2 and 34%, respectively. The first group includes varieties corresponding to class 2 and 3, with a drop number of 150-200 c.: Lyubava 5, Iset 45, Laskada, Kalispero, KVS Buran. Varieties with average baseline values corresponded to class 5. The varieties of the third group had low germination rates (65.9%), grain type (680 g/l), vitreous (40.8%), and drop rate (61.6 c). Grain size negatively affected its physical and biochemical properties. A negative relationship was found with grain type (r= -0.34), vitreous (r=-0.34... -0.64), gluten (r=-0.47 ... -0.59), protein (r=-0.47... -0.5). The effect of grain size on the number of drops was noted in the group of varieties with a low index (61.6 c.), the larger the grain, the lower the number of drops (r= -0.33).
