The purpose of the work was to study the amino acid composition of substances received by complex technology of raw velvet antler processing at Visterra LLC production enterprise. To implement these tasks, we obtained four samples of raw maral velvet antlers and carried out an assessment of amino acid composition of each of them at the Laboratory for Processing and Certification of Products of Velvet Antler Deer Husbandry, VNIIPO FGBNU FANTsA [All-Russia Research Institute of Velvet Antler Deer Husbandry, Federal State Budgetary Scientific Institution “Federal Altai Scientific Centre for Agrobiotechnologies”] (Altai Krai), by method of high-performance liquid chromatography (HPLC) according to the M-02-902-142-07 technique using high-liquid chromium Shimadzu LC-20. The enterprise produced four samples - blood and lymph substance, protein-peptide substance, bone mineral substance and skin lipid substance. All samples except sample No. 4 (lipid biosubstance) were dried to 10% moisture content. Examination of amino acids in the samples revealed the presence of 18 amino acids in three samples (Nos. 1-3), with the total amount being higher in sample No. 1 - 49.0%, which was 12.6% higher than sample No. 2 and 34.4% higher than sample No. 3. The amount of nonessential amino acids in the analysed samples was significantly higher than that of essential amino acids. Sample No. 1 (blood and lymph) showed almost the same amount of these amino acids in qualitative terms. Sample No. 2 (protein-peptide biosubstance) showed prevailing collagen derived amino acids, such as glycine, proline and oxyproline. Moreover, the most prevailing amino acid was identified to be glycine. Sample No. 3 had the minimum amounts of amino acids, among which glycine, proline and threonine were prevailing. No amino acids were found in sample No. 4 (lipid sample) of raw maral velvet antlers.
