Food irradiation is an effective technology that can be used to ensure food safety by killing insects and pathogens to extend shelf life. The introduction of this method is necessary for the population, because approximately 25% of products are lost after collection due to spoilage, parasites, etc. The danger to people turns into an increase in mortality and morbidity, for example, US statistics show that food poisoning diseases lead to 9000 deaths and 24 million diseases every year, while the indicators do not stop, but are constantly growing. This process can be applied to fresh or frozen food without affecting nutritional value. Currently, according to the Institute of Food Science and Technology, more than 50 countries have implemented this technology. The implementation of this technology shows good results in Asia and Europe. For example, in Poland - irradiated potatoes and onions: 90% of the total intake of potatoes and 95% of onions; in France, irradiated strawberries sold well even at 30% added to the usual price, which indicates good acceptance, only 2% of people refused to irradiate strawberries [1]. However, technology adaptation differs from country to country, and in some cases, misunderstanding and rejection by consumers can hinder the technology adaptation process. If we turn to the data, despite the slower rate of adaptation, the market for ionization of products has grown, if in 2010 the market for the sale of irradiation of products adhered to $ 2.2 billion, then by 2020, according to experts’ forecasts, it will grow 2.5 times, and by 2030 will rise 5 times [5]. At the moment, the Russian Federation is also actively involved in the policy of interaction between radiation and food products, so the State Corporation Rosatom is working on the ionization of dried fruits, minced meat in many regions, the level of funds allocated for work in the Kaluga region is about 750 million rubles. Thus, this paper summarizes the development of irradiation methods around the world and the attitude of consumers towards the introduction of this technology. The usefulness, positive effects, necessity, regulation of exposure and statistical indicators of different regions are also evaluated.
