The article analyzes modern food technologies that can not do without the use of a number of food additives that perform a variety of technological functions. For this purpose, there is an arsenal consisting of more than four hundred individual dietary supplements and a huge number of complex supplements. Their use is regulated by the relevant rules and regulations, among which hygiene standards and national terminology standards play an important role. The absence of such restrictions creates difficulties in the work of state bodies for technical regulation, customs control services and supervisory authorities.
