Most oilseeds accumulate oil in their seeds and fruits. Oilseeds are liquid, semi-liquid and solid, pressed or extracted. Oilseeds include sesame, safflower, sunflower, and peanut. The seeds of these crops contain 15- 63% of oil. Therefore, they are widely used in the food, canning and confectionery industries. Maxsar is a representative of oilseeds. Maxsar seeds contain 25-35% of oil, which is mainly used in the food industry and in the production of margarine. Maxsar oil is used to make alif, dye, and soap. Pistachios are a valuable food for poultry and are used as a source and fertilizer. In recent years, in some farms of the republic safflower is grown as a food crop.
