The possibility of regulating the indicators of the oxidant-antioxidant status of biological systems by biotechnological processing of wheat and buckwheat grains has been studied. Wheat and buckwheat grains were fermented using a dry complex enzyme preparation dissolved in a buffer based on succinic acid. Under the action of the drug, the microstructure of the grain surface has changed, the amount of biologically active substances of antioxidant action has increased. A grain concentrate was obtained from fermented grain, which was introduced for 30 days into the diet of laboratory animals of male rats of the Wistar line. The experimental data obtained showed that the introduction of grain concentrate from modified grain into the diet of laboratory animals had a positive effect on the oxidative-antioxidant state of the rat organism: the oxidative stress index in the blood serum decreased - the level of malondialdehyde and increased the content of antioxidants - catalase, vitamins A and E, trace elements compared with the control. Determination of the most important indicators of the antioxidant activity of a food component or a food diet allows predicting the state of the oxidative-antioxidant system of the animal and human body.
