Young bulls of Aberdeen Angus breed - from raising of cattle to storage of meat before sale

Recently the Aberdeen-Angus cattle breed has become very popular and now it is one of leading breeds in the structure of livestock of cattle being bred in the Russian Federation. The breed is actively being bred in the Central region, the Volga region, North Caucasus, Krasnoyarsk and Altai regions. Due to high productivity of meat, early maturity, and quick acclimatization and adaptively to all year-round growing in the pasture conditions this breed deservedly takes a leading position in the beef cattle breeding. Data on study about raising of young Aberdeen- Angus bulls (live weight and its average daily growth in 15 month of feeding young bulls) are given in the article. Beef possesses high nutritional value and it is characterized by the necessary technological properties for its further processing. The assessment of chemical composition of beef for the production of semi-finished products of high quality was carried out. It has been shown that chemical composition of muscle tissue of young bulls is well balanced in terms of content of all necessary substances for good nutrition, at the same time the amount of inclusions and fat layers in the structure of muscle tissue is increased ensuring its “marble look”. The definition of optimal temperature-moisture parameters of refrigerated storage of meat raw materials is an urgent task the effective solution of which will preserve quality parameters and the safety of meat raw and food products. Storage of vacuum packed beef at subcryoscopic temperatures - is one of the prospective trends in research aiming to preserve the original freshness and consumer properties at minimum changes in structure of meat and significant increasing of its shelf life. The research held under the conditions of storage of meat in cool and superchilled states has shown that in such terms as active acidity of meat, change of color and accumulation of free amino acids in the process of storage at cryoscopic temperatures it provides better quality and longer shelf life.
