The diagnostics and veterinary and sanitary assessment of meat and products of animal slaughter for helminthiasis

The purpose and objectives of the research were to study the features of post-slaughter diagnostics and veterinary and sanitary evaluation of meat and animal slaughter products for helminthiasis; to analyze the results of veterinary and sanitary examination of the laboratory of the food market "Totem" in Kirov district of Krasnoyarsk for 2016-2019. For the analysis, the data from the annual reports of the veterinary and sanitary examination market laboratory (form No 5-vet), as well as the methods for examining carcasses and organs of pigs and cattle were used. The study determined that for the period from 2016 to 2019 in the laboratory veterinary and sanitary examination market 21353 carcasses of slaughter animals were examined, of them 7575 - the carcasses of cattle and pig carcasses -13778. It was revealed that due to helminthic diseases, 1 carcass of cattle and 42 organs, as well as 10 organs of pig carcasses, were culled.
