The article provides information about the dietary and medicinal properties of sweet pepper fruits. The beneficial effect of sweet pepper on the human body is explained by the richness of its vitamin composition and the variety of minerals involved in important metabolic processes of the human body. The fruits of sweet pepper contain a complex of biologically active substances, have antioxidant properties. The content of vitamin C in fruits is 114-248 mg%, flavonols-20-144 mg%, carotene-5-13%, sugars-2.0-5.7%. The description of valuable biochemical parameters of Siberian pepper fruits is given. The purpose of the research was to systematize information about the biochemical composition of pepper fruits, to evaluate their dietary and medicinal properties. To evaluate the varieties of pepper of the Siberian selection according to the biochemical parameters of the fruits.
