Advantages and disadvantages of soybean seeds and its role in formation of quality of foodstuff and medical preparations

«OIL CROPS» Scientific bulletin, VNIIMK, 2006, is 2 (135). It is shown, that the soybean is the unsurpassed natural corrector of a meal as the protein is capable to remove in a diet deficiency, vitamins of group B and Е, of some the major macro- and micro elements. Achievements of VNIIMK' breeders and biochemists who has created varieties with initially lowered contents the most thermo stable nutrients of soybean seeds and simultaneously increased contents a protein are marked. It is offered to use more widely soybean sprouts and enzyme processed soybean products for a human meal and feeding of animals. The opinion on expediency of manufacture of medical preparations from separate components of soybean beans is stated: lectines, trypsin inhibitors, phytoestragenes, olygo sugars as they at use in the medical purposes more salutarily than chemical preparations operate on human organism.
