Results of definition the qualitative structure and quantitative content of glycogen amino acids in grapes, apricots and apples, which were cultivated in ecological conditions of plan and foothills zone in Dagestan are presented. Alanin, glutamine and aspartat were the main in fruits. The most considerable total concentration of glycogen amino acids in apricots was dimension. It was revealed, that in processes of forming glycogen amino acids in grapes, apricots and apples are going under the impact of hereditary properties and ecological conditions of grow places.
