The XX and first decades of the XXI century are characterized by the processes of transformation of the main elements of traditional culture associated with the widespread penetration of technology. For example, the existence of practices of baking among rural population of Western Siberia demonstrated some form of change of the traditional elements - the extinction of home bakery, moving it to the sphere of interest of local entrepreneurs, more active introduction of innovations in the process and expanding the range of baked products, in particular, the growing number of production enterprises, specializing in baking a variety of bread products. These transformations are interpreted as a natural reflection of the development of the dichotomous pair "tradition-moderniza-tion". The authors focused their main attention on field materials that record this process. The detailed description of the etiquette norms of bread consumption among the rural population of Western Siberia, as well as the ritual component of bread-making, remained outside the scope of the work.
