The work carried out the determination of the caffeine content in various varieties of coffee by chromatographic analysis on HPLC Shimadzu LC-20. A comparative analysis of the caffeine content in Arabica coffee beans from different growing regions showed no significant differences. An increase in the caffeine content is observed in soluble coffee varieties produced entirely from coffee beans of the same variety, or with their partial addition.
