Использование ультразвука для извлечения компонентов из растительных материалов - обзор

Рассмотрены примеры применения ультразвуковых экстракционных процессов для улучшения качества переработки в пищевой промышленности и смежных отраслях. Он применяется для извлечения жиров, белков, биологически активных компонентов из растительных материалов с высоким содержанием экстрагированных компонентов для увеличения скорости извлечения и сокращения времени экстракции. Представлены попытки математического описания процесса ультразвуковой экстракции и ультразвуковой кавитации, но представленные модели не учитывают всех рабочих факторов и требуют дальнейшего улучшения.
