Study of the biological value of baby cottage cheese, enriched by bifidobacteria

The article reveals the biological value of baby cottage cheese enriched by Bifidobacterium. It is found out that proteins of the fermented cottage cheese have a full amino acid composition and contain all the essential amino acids in significant quantities. A high protein baby is attacked by digestive proteinases, connected with proteolytic activity of ferment microorganisms. Lysine in various stages of the technological process of baby cottage cheese showed its increase in the fermentation process.
