The paper investigates the physical and chemical characteristics of local varieties of pumpkin fruits. The following local pumpkin varieties were selected as objects of research: palov kadu, nutmeg, winter table, Kashgar. The average content of the mass fraction of dry substances in pumpkin samples was determined. Pumpkin sample solids contain relatively large amounts of invert sugar and starch. Modern research methods were used to analyze and assess the physicochemical characteristics of pumpkin. The average content of the mass fraction of dry substances in the studied pumpkin varieties was determined.
