The study was aimed to a comparative examining of aqueous and aqueous-ethanol extracts of peppermint (Mentha piperita) and common oregano (Origanum vulgare). The gravimetry method made it possible to establish that the using of water as an extractant contributes to extracting more amounts of substances than the involving of ethanol of various concentrations (70% and 95%). A comparative analysis showed that the content of extractive substances predominates in the aqueous extraction of common oregano. A comparison of the antioxidant activity of extracts has been carried out. According to the results obtained, it has been determined that aqueous extractions have higher activity levels. When comparing the antioxidant capacity of separate water and alcohol extracts of peppermint and common thyme, it was found that the total amount of biologically active substances with restorative properties is higher in the case of the latter.
