Study of cryoseparation of anthocyanin extracts at moderate temperatures to obtain natural pigment concentrates

This work studies cryoseparation of anthocyanin extracts at moderate temperatures to produce natural pigment concentrates. Aqueous extracts of dried and powdered press cake of black rowan berries (Sorbaronia fallax) were used for analysis. It has been experimentally shown that when freezing at moderate temperatures, water extracts freeze unevenly and, the solution formed on top contains a large amount of anthocyanins, which does not contain natural protein. Natural protein is known to promote rapid coagulation of the solution. Freezing at lower temperature with subsequent fractional thawing also allows to separate the fraction of pigment concentrate.
