The process of heat and mass aerating of produce bulk with cooling air is characterized by a complex, multifactor phenomenon of heat and mass exchange and aerodynamic airflow. In the process of storing the mass produce is a viable ongoing process. The article describes the theoretical basis of heat and mass exchange processes of container storage method of fruits and vegetables widely used in Eastern Siberia. The analysis of the products storage technology in vegetable stores with active ventilation can provide the basic requirements for a theoretical model of heat and mass exchange in bulk layer.
