Research of taste preferences of a person: psychological aspect

This article is devoted to the problem of taste preferences of a person in different mental states. The authors made an attempt to understand how the mood and temperament of the individual affect the choice of dishes. One of the main reasons why a person builds their taste preferences is the increase in positive emotions and the decrease in negative ones due to the use of certain foods and drinks. The purpose of this study is to study how food affects a person's well-being, as well as what effect mood and temperament have on a person's preferences. Sensitivity to some taste stimuli is individual, and the threshold values for people of different sexes vary significantly. The object of research is the personality of a person. The subject of the study is the taste preferences of the individual. The research methodology is represented by general scientific methods, such as analysis and synthesis of information from open sources, analytical generalization of theoretical data, as well as a survey and questioning. The relevance of the research topic is due to the fact that certain personality traits can be associated with the thresholds of gustatory and olfactory sensitivity. The novelty of this study lies in the face-to-face questioning of students of Ulyanovsk State University in order to determine what a person wants in a particular mood, as well as in an online survey of respondents. A total of 93 people took part in the study. The results were obtained from surveys made on the basis of the menu of one of the restaurants in the city of Ulyanovsk. The practical significance lies in the possibility of using this study for the most complete and broad study of this topic.
