This article provides an analysis of the selection of temperature that affects the rate of fermentation of the substrate using microbiological cultures that are part of the consortium. During the study, it was noted that the yeast Zygosaccharomyces kombuchaensis ferments sugars, and the bacteria Gluconacetobacter xylinus actively produce cellulose mass and acetic acid, while both microorganisms show growth at a temperature of +(25±1) ℃, which is the most optimal temperature for quickly reaching the pH of the medium. 3.5 and termination of cultivation while maintaining all the necessary parameters for a functional drink.
