The article deals with the conditions of the food flavouring industry development in Crimea during the pre-war and post-war periods. The structure of the food flavouring industry according to basic types supported by the local agriculture raw products is discussed. The authors study the features and distinctive growth of production in the pre-war period, active recovery and rapid growth during the postwar period. The paper considers development conditions of various sectors of the food flavouring industry and the entry of the Crimean region into the position of supplying the country with food products.
