Change in the chain length of collagen extracted from the skin of fish irradiated with microwaves

Electromagnetic irradiation of fish skins, from which collagen had been isolated, was carried out at frequency of 2.45 and 263 GHz with the energy of 400 to 900 J. Analysis of the molecular mass characteristics of collagen showed that starting from irradiation with energy of ~400 J, the decrease in the fraction of high molecular weight and the formation of collagen fractions with lower molecular mass occurred. The polydispersity coefficient of the initial protein changed insignificantly during the irradiation process.
