Information on the biochemical composition of tomato raw materials grown in the Republic of Dagestan is given. A theoretical substantiation of the expediency and efficiency of using tomato seeds for the production of specialized food products is given. Modern ways of processing tomatoes using the achievements of food biotechnology and experimental pharmaconutrition are analyzed.
