The article analyzes the problems of increasing the efficiency of innovative projects in the field of milk processing, since the importance of the study of innovations and their properties is explained by the sharply increased impact of scientific and technological progress on the development of production and the market. As a result of the assimilation of the latest achievements of science and technology, fundamentally new, previously not manufactured goods are poured into the exchange of goods in a wide flow. At the same time, there is a process of accelerating the renewal and improvement of manufactured goods.
