The article presents the results of studies about the effectiveness of extruding the floury poly-cereal mixtures; obtained dependence of the operating parameters of the process on the variable rotation frequency of extruder' auger and humidity value of extruded poly-cereal mixture. The obtained results have practical significance in the construction of the technological scheme of food production of high readiness.
