On an example of studying taxonimic compound of the yeast dated for grapes and fruits, reorganization of teast community is shown at change of ecological conditions of dwelling. The group of eurysynusic yeast, including true yeast is revealed. The expediency of use nature-resourced potential of kind S. cerevisiae is noted by search the effec-tive strains.
