Experimental and calculated substantiation of geometrical parameters of cutting of root vegetables

A simulation of the effect of twisting of a shaving of a small thickness and an estimate of the effect of this phenomenon on the size of the contact area of the chips with the extracting agent during the extraction is carried out. Estimation of the reduction of the extraction area for fruits of different sizes was made. Specific recommended values of the geometric parameters of the cuttings obtained by cutting are presented. As a result of the experimental calculation model, the technological inexpediency of using shavings of smaller thickness was confirmed. The greater diffusion efficiency with a smaller chip thickness as a result of the total diffusion process does not take into account the twisting phenomenon, which increases the technological thickness due to plyness. Thus, in order to determine the optimum chip thickness, the data on twisting should be guided, which will allow to take into account the specificity of the process. The obtained experimental and calculated substantiations and specific recommendations allow, in modeling and designing the process of diffusion of sugars from root crops, to provide optimal technological parameters of the cutting process that effectively provides the formation of a given optimum chip thickness.
