Investigations of the elemental status of the population of Chelyabinsk (starting with 18 years of age) to identify the risks of hypo-and giperelementoz technogenic nature. In all age groups excess of 32,0-38,0 % upper limit of the allowable levels of Ni was found, which causes every second (third) the risk of Chelyabinsk giperelementoz Ni. Since 30 years of age and throughout life, most people have an increased load of toxic elements Cd, Pb, Hg and Cr.In this case the risk of developing age-giperelementoz increases significantly. However, the risks of giperlementoz are only a few cases. Thus, the possibility of production of food enriched with Se was scientifically proved, which is an antagonist to the many heavy metals, and possesses a strong antioxidant effect.
