Qualitative characteristics of bacterial concentrate enriched by dietary fibers

This paper presents the results of the development of bacterial concentrate enriched with dietary fiber. We have selected the optimal dose of cedar oil meal which shows the best growth of the bacterial biomass. Antimutagenic and adhesive properties of bacterial concentrate have been investigated. Quality indicators of the finished symbiotic product have been defined.
