Quality and biochemistry of barley grain

The paper is dedicated to the research of quality and amylolytic activity of Biome barley grown in Novosibirsk region in 2012-2013. Great importance in the technology of food production is raw material, its type, sort and quality. Assessment of grain quality helps to determine its merit factor, the degree of usability, storage stability, technological properties, to organize transportation, storage and processing. The results showed that the total Biome barley grain hardness was 24%, 1000 grain weight was 49.7g, grain unit was 715 g/l, hoodness was 6.95 %, mass fraction of grain admixture was 3.83 %, mass fraction of foreign impurities was 0.3 %, mass fraction of moisture was 10.1%. Amylolytic activity of normal grain quality was 70,27 standard units, α- amylase was 4,71, β- amylase was 1.97. Amylases activity of the sprouted grain on the fourth day of growth was 128.53 standard units, α-amylase was 28,45, β- amylase was 11.36. Amylases activity of the sprouted grain on the seventh day of growth was 136.8 standard units, α-amylase was 41,32, β-amylase was 20.24.
