The article presents the results of research to determine the quality indicators of grain varieties of spring soft wheat. The research was conducted in 2018-2019. Four main indicators of grain quality were determined for five varieties: weight of 1000 grains, grain nature, vitreous content and gluten content. For each indicator, there are varieties that form an indicator of a trait that exceeds the standard indicator in the conditions of cultivation.
