The paper discusses the features of the market for milk and dairy products in the context of the southern macro-district of the Krasnoyarsk Region. In 2022, the demand for dairy products shifted towards more affordable categories under the influence of a decrease in household income amid rising prices and higher inflation rates. The Russian economy has faced challenges that continue to affect the well-being of the population and the level of affordability of goods. The most pronounced tendency is to replace certain expensive categories of dairy products in the diet with more affordable drinking milk. Under the influence of demand, the volume of supply in the market of milk and dairy products is decreasing. Difficulties in adapting business processes of production are formed under the influence of market factors in the domestic and foreign feed markets, the cost of production means, and the level of inflation. According to the authors, the predicted decrease in production efficiency in the commodity market and in the processing industry sector will lead to a decrease in profitability and a slowdown in the investment activity of the dairy industry.
