The article is devoted to the consideration of the possibility of using optical - electronic equipment to control the quality of beef meat. A method for determining meat quality indicators is presented. The article describes the characteristics of beef carcasses, depending on the color of muscle tissue and subcutaneous fat. A method for determining the class of high-quality beef, by introducing into the production of optical-electronic equipment.
