Mongolia is a country that produces environmentally friendly livestock products using low-cost technologies of year-round grazing of animals. The main branch of agriculture in the country is animal husbandry. The meat of animals is a good nutrient medium for the development of microorganisms, thus in order to preserve its quality it undergoes cold storage, in which case the composition of the microflora changes. Violation of the conditions of storage and reproduction of certain groups of microorganisms lead to the development of various meat defects, which can often become the cause of bacterial toxicoses and toxicoinfections in humans. In this regard, the purpose of the present work was to determine the dynamics of the quantity of mesophilic aerobic and facultative anaerobic microorganisms (QMAFAM) in meat and its chemical analysis depending on storage conditions and season. 48 samples of beef and mutton in both refrigerated and deep-frozen state were selected for microbiological and chemical studies...
