Meat resources of the region: consumption, production, efficiency

The paper is devoted to the study of the formation of meat resources and their provision of the population of the Krasnoyarsk Region - a region with a continental climate. The assessment of per capita food consumption, as an important indicator of the level of food supply of the population, indicates a decrease in the energy content of the diet, an irrational structure with a high content of carbohydrates, which negatively affects the health of every inhabitant of this region. The actual consumption of meat and meat products in recent years has exceeded the rational norm, which is explained by the extreme climate, which determines the increased requirements for the content of proteins and fats in food. The low level of consumption of milk and dairy products, fruits and berries, as well as vegetables, compared to the norms, is compensated by less nutritionally valuable products. The production of meat resources in the region increases in dynamics, but at the same time, the volume of their import increases with a small share of export outside the region. The production of poultry and pork is increasing while reducing the meat of cattle in agricultural organizations due to the reduction in livestock. Per capita production of meat resources for all types is below the consumption norms, except for pork. The share of specialized beef cattle in the total livestock is decreasing every year, which leads to an increase in the share of production of lower quality beef from dairy cattle. The number of agricultural organizations engaged in specialized beef cattle breeding is decreasing. The average daily increase in live weight of beef cattle is decreasing. The high cost of meat products with insufficient state support affected the unprofitability of the industry as a whole. Therefore, it is unprofitable for most agricultural organizations to engage in specialized beef cattle breeding. In this regard, in order to provide the population of the region with high-quality beef, it is necessary to create a large-scale production that meets all modern requirements for specialized beef cattle breeding.
