Yolk lipoproteins biological system model: parameteres of initiated oxidative modification of proteins in pool of average-weight molecules

The characteristic differences of yolk lipoproteins biological system model in terms of the level of oxidative modifications of proteins were studied. Mentioned differences are better seen during the registration at 530 nm. These differences can serve as the parameters describing the reactability of the system under spontaneous and Fe 2+-induced oxidation. Yolk lipoptoteids with propolis and royal jelly or rat blood serum can serve as effective biological model systems.
