Modernization of the refrigerating system for getting iced water for cheese production

The main raw material for the production of cheese is milk, which must be cooled using technological equipment. For the best preservation of the properties of milk, instant cooling is necessary. For this purpose, plate heat exchangers are used, where the milk is cooled to a temperature of about 3°C above the temperature of the coolant, which is used as ice water. The article describes the main characteristics of the existing refrigeration system for producing ice water for the production of cheese and describes the technological process for the production of ice water. A number of technological solutions are proposed to increase the efficiency of the refrigeration system and reduce the cost of energy for the production of cold. The proposed solutions reduce the amount of equipment that provides the production of cold for the ice water system, compared with the existing system. A selection of new equipment has been made and an assessment has been made of the effectiveness of the replacement. As a result of the replacement of the compressor units of the refrigeration system, the electric power consumption per unit of produced cold was reduced by 19,3 %. The ammonia consumption of the equipment and liquid pipelines was calculated before and after the modernization, which led to a decrease in the amount of ammonia per unit capacity of equipment producing cold by 66,7 %.
