The article discusses the modernization of the paddle minced meat mixer. The main disadvantage of this equipment is the extremely low quality of mixing the minced meat with the rest of the ingredients, which leads not only to a decrease in the efficiency of the production process, but also to a deterioration in the quality of the finished product. It should also be noted that the specific design of the machine leads to heating of raw meat during its mixing, which leads to the onset of denaturation of proteins and deterioration of the juiciness of the finished product, which negatively affects its taste. Also, this device cannot be used to carry out the procedure for mixing various other vegetable ingredients, fish. By using an improved mixing device, it will be possible not only to improve the mixing quality of the minced meat, but also to achieve the effect of increasing the overall productivity of the production process. This modernization option is quite feasible, including in the food industry.
